- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for even easier cleanup.

- Drizzle the vegetables with 2 tablespoons of olive oil. - Spread the sausage and vegetable mixture in a single layer on the prepared baking sheet. It’s important for everything to have enough space to roast properly and not steam.
- Place the baking sheet in the preheated oven and roast for 25 to 30 minutes, or until the potatoes are tender and slightly crispy, the vegetables are softened and slightly caramelized, and the sausage is heated through and lightly browned. You can toss the ingredients halfway through the cooking time for more even browning, if desired.
